Southwest Salad

  • 3 cups romaine lettuce, washed and torn
  • 1/4 cup frozen corn, thawed
  • 1/2 can black beans, drained and rinsed
  • 1/2 avocado, diced
  • 1/2 cup cherry tomatoes
  • 1/4 package chili-lime Texas Toast tortilla strips
  • 1 TB canola or olive oil
  • Zest and juice of 1/2 lime
  • 1/2 tsp chili powder
  • 1/2 tsp. dry mustard powder

For the dressing, use a whisk to combine all ingredients in a small bowl. In individual salad bowls, layer the first 5 salad ingredients. Add dressing and top with tortilla strips.

Makes 2 servings. Nutrition Information per serving: 285 calories, 36 grams carbohydrate, 17 grams fat, 9 grams protein, 162 mg sodium, 12 grams fiber
