Banana Bread Oatmeal

  • 3 c. nonfat milk
  • 3 Tablespoons packed brown sugar
  • 3/4 teaspoons ground cinnamon
  • 1/2 teaspoons salt
  • 1/4 teaspoons ground nutmeg
  • 2 cups steel-cut oats
  • 2 cups mashed ripe bananas (about 4 medium)
  • 4 Tablespoons walnuts halves
  • Directions
  1. Grease a crockpot well or use a disposable crockpot liner.
  2. Add all ingredients except nuts in crockpot and stir to combine.
  3. Heat walnuts in a single layer in dry skillet over medium heat. Stir often until the nuts start to brown and smell toasted, about 2 minutes. Cool, chop and set aside.
  4. Cover the crockpot, set to Low, and cook 6-7 hours for firm oats or 8 hours for softer oats
  5. Makes 8 cups. Nutrition per 1 cup serving: 296 calories, 11 gms protein, 52 gms carbohydrate, 6 gms fat, 186 mg sodium.
