Honey Lemon Fruit Salad

  • 2 tablespoons fresh lemon juice
  • 3 tablespoons honey
  • 2 large crisp apples
  • ½ fresh pineapple
  • 5 clementines
  • 1 cup green grapes
  • 1 ½ cups raspberries
  • 1 cup blueberries
    1. Mix the lemon juice and honey in a bowl, and set aside.
    2. Cut apples into small chunks. Place the apple chunks in a medium salad bowl, and immediately pour on the lemon-honey mixture.
    3. Cut pineapple into tidbits. Immediately put the pineapple pieces on top of the apple pieces. Cut the other half of the pineapple as desired and set aside for another use.
    4. Peel the clementines and separate into sections. Add these to the salad bowl.
    5. Add grapes, raspberries and blueberries.
    6. Mix the salad carefully to avoid bruising the fruit. Make sure the honey-lemon mixture is well distributed.
