Quesadilla for One

1 large flour tortilla

1/3 cup shredded cheese 

Optional ingredients:

  • Diced cooked chicken, beef, fish or pork
  • Canned beans, drained
  • Diced tomatoes
  • Diced onion
  • Corn
  • Green chilies
  • Jalapenos

Place tortilla in a large non-stick skillet on the stove. Turn on heat to medium.  Add cheese and any other ingredients to half of the tortilla.  Cook 3-4 minutes, or until cheese is starting to melt.  With a spatula, fold the side of tortilla without toppings on top of the other side.  Cook 2-3 more minutes or until cheese is melted.   Cut into wedges before serving.

Dip in salsa or sour cream if desired.
