Grilled Caprese Sandwiches

 

Makes 2 sandwiches.

Ingredients:

4 slices bread or sandwich thins

½ teaspoon garlic powder

2 teaspoons olive oil

2 slices mozzarella cheese, preferably fresh

1 ripe heirloom tomato, thinly sliced

8 large basil leaves

Salt and pepper

Preparation:

  1. Mix garlic and oil and spread on one side of bread slices. Layer the plain side of bread with cheese, tomatoes, basil, salt and pepper; dividing evenly. Top with remaining bread, oil side up.
  2. Cook 2 sandwiches at a time in a large frying pan over medium-low heat, covered, turning sandwiches once, until golden brown and cheese is melted, about 6 minutes. Cook less time if using thinner bread.

Nutrition (per sandwich): 350 calories, 5 g fat, 25 g protein, 50 g carbohydrate
